Menu Engineering
The stars, plowhorses, puzzles and dogs matrix kept current from live POS sales and supplier invoices, with explained suggestions. The chef decides every price and recipe change.

Most AI for restaurants is sold at the front of house: phone answering, reservation bots, chat on the website. Those can help, but the larger and less visible gains are behind the pass, in the numbers a restaurant already produces. The POS (Toast, Square, Lightspeed) knows what sold and when. The recipe and inventory system (Apicbase, MarketMan, Restaurant365, or a spreadsheet) knows what it costs. The supplier invoices know what it cost this week.
We join those, then build narrow tools on top: a menu engineering view that updates with every invoice, an order suggestion per supplier, a food safety log that chases missing checks. Two things stay with people by design. Allergen information, because the law and the consequences put it there, and any food safety decision, such as whether a batch is discarded. The system records and reminds; a named person signs.

SEE MENU ENGINEERING →Demand forecasts per dish turned into suggested orders per supplier, checked against par levels, deliveries and price changes, for the head chef to approve.
SEE SUPPLIER ORDERING →Digital HACCP records: temperatures, deliveries, cooling and cleaning logged as they happen, missing checks chased, corrective actions recorded with who took them.
SEE FOOD SAFETY RECORDS →Voice agents that take bookings and answer routine calls in several languages, and pass allergy questions and complaints to a person rather than answering them.
SEE VOICE AI →These are engineering controls we build into the architecture, not certifications. QQuantum.ai holds no certifications, and the food business operator remains responsible for its HACCP plan, allergen information and compliance with food hygiene law — see our trust centre.

Behind the pass, for menu costing and engineering, forecasting demand and suggesting supplier orders, scheduling staff from expected covers, and keeping food safety records complete. The back-of-house uses tend to matter more to margin, and they depend on the restaurant's POS, recipe and invoice data being connected.
There is no single one. A restaurant usually needs its POS, inventory and booking platforms to do their jobs well, and then narrow AI tools that use their data. The useful question is which decision costs the most when it is made badly, usually menu pricing, ordering or labour, and to start there with the data the restaurant already holds.
Yes, for routine bookings, opening hours, directions and simple orders, in several languages, writing straight into the booking system. We set it to hand allergy and dietary questions to a person, because a wrong answer there is a safety issue. It also tells callers they are speaking to an automated assistant.
We do not build it to. Under EU Regulation 1169/2011 and, in the UK, the rules strengthened by Natasha's Law, allergen information must be accurate, and recipes and suppliers change. An AI can surface the recorded allergen matrix to staff and flag when a recipe change affects it; confirming to a customer what is safe for them is for a trained person.
Yes. Those POS platforms have APIs that expose item-level sales, which is what menu engineering and forecasting need. Inventory platforms such as MarketMan, Apicbase and Restaurant365 also expose recipes and stock. Where the recipes live in a spreadsheet, building a clean recipe base is the first piece of work.
